Hi there! I’m Maddison, I am a transplant living in Seattle. I moved here seven years ago from East Tennessee. I grew up on a farm in Tennessee, that’s where my love of cooking came from. My grandma has a very simple way of doing things, but I like to think that’s where I learned the basics. Also, where I found my love of Southern food.
I moved to Seattle, and immediately dove, head first, into the culinary world. In the past seven years of living here I have worked; as an executive pastry chef, at a gourmet food shop, managed a coffee shop, been an early morning baker, catering manager, and a prep/line cook. I want to be able to do it all if I ever have a restaurant of my own. Ultimately though, I want to do something small where I get to work one on one with local growers and purveyors. Perhaps one day I will have a farm of my own.
On the cooking front, I enjoy just about anything. I love taking fresh ingredients from here in the Pacific Northwest and making delicious, comforting meals. I have a weakness for sweets, and I love anything chocolate. My cooking style focuses primarily on Southern dishes and techniques, with a fresh twist from ingredients found in the Northwest as well as a little classic influence from my love of French cuisine. I strive everyday to learn something new, and better myself as a chef. Please, feel free to look around, ask questions, and enjoy my journey.
